The Lazy Sunday Dinner

As you may have read in my previous post, I am starting to have a hearty meal on a Sunday, rather than the very simple and quick food I usually make. This week however, was a bit of  a quick fix... but pretty hearty nonetheless. It has just been little old me this Sunday for dinner and I have been pretty busy, which is my justification for using all prepared food. Positively, I think it does show that not all pre-packaged food is unhealthy, I think prepared veg is especially good when you live a busy life and want a healthy diet. I thought I would also introduce those who have not tried/heard of it before to the Quorn 'steak' and Mushroom Pie.

I like pie, and I think meat replacements are very useful, but I don't use them all the time as I don't need something to replicate meat, to make me feel like I am having a good meal.

 This is a great for the lazy girl inside me. Asda had these winter veg trays for £1, they are usually only £1.50 though which is pretty reasonable! They have prepared potatoes, onions, parsnips and carrots, it also comes in a disposable roasting tin so all you have to do is shove it in the oven for an hour.

Then you get this wonderful easy dinner! I love roasted vegetables and I have some leftovers for tomorrow lunch. The pie was good, I don't know how alike it was to a steak pie, as I have no memory of what a steak pie is like. I thought it was mushroomy and moreish, which I really enjoyed.

  1. wow. It all looks amazing. I can't find good meat replacers here. They all taste like shit. So I've started making my own. It's pretty cool to learn. I think it's awesome you are cooking hearty Sunday meals! It's so easy to get in the habit of quick small meals through out the day. :)

  2. I love Quorn. I try not to eat too much soya based stuff so its great. We have some really crappy meat replacements here. My Mum going me fake turkey one year and it was so gross.

    Thank you also! I'm not sure if everyone is like this, but my family have one of their main big family meals on a sunday. I miss it and love going home to big dinners with either my or RB's family x

  4. Nice! Just wondering how long it takes to roast vegetables in the oven. Will the vegs be crunchy or soft? Over here, we stir fry or blanche them. Roasting them would be a nice alternative!

  5. I would say around an hour without them being part boiled and cut into medium sized chunks :) x
